Revamp any salad with this homemade dressing, ready in a snap! This dressing is best served with pasta, potato or grilled vegetable salads.

Method

In blender or food processor, purée chunk light tuna, mayonnaise, grated lemon zest, lemon juice, capers, and anchovy fillets, until smooth (if necessary, add water, 1 tbsp at a time, until desired consistency is reached).

Season with salt and pepper. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days.)

This dressing is best served with pasta, potato or grilled vegetable salads.
