Method

Preheat oven to 425°F. In single layer on baking sheet, combine sweet potato, oil, garlic powder and paprika; season with salt and pepper. Bake until sweet potatoes are tender, stirring halfway through cooking time, about 15 minutes. Let cool.

In large bowl or on serving platter, arrange mixed greens. Top with tuna, edamame, avocado and roasted sweet potatoes. Drizzle with Old-Fashioned Dressing; toss to coat.

Old-Fashioned Dressing In small bowl, combine 3 tbsp olive oil, 2 tbsp white wine vinegar, 1 tbsp grainy mustard and 1 tsp maple syrup; season with salt and pepper. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days.)  Makes about 1/3 cup.
