Turkey In Creamy Tarragon Sauce

In skillet, heat oil over high heat. Add turkey strips and cook, turning, occasionally, until lightly browned, about 5 minutes. Sprinkle with dried tarragon and season with salt and pepper. Transfer turkey to plate; set aside.

In same skillet, melt butter over medium heat. Add onion and shallot; cook, stirring often, for 2 minutes. Stir in wine to deglaze pan, scraping up browned bits with wooden spoon; let wine reduce for 1 minute. Return turkey to skillet; stir in broth, cream, maple syrup and Dijon. Sprinkle with fresh tarragon and season with salt and pepper. Cook until sauce is slightly reduced, 2 to 3 minutes. Serve over cooked orzo, if using.
