Brush one side of each bread slice with butter and the other sides with Dijon. Top mustard side with one slice of cheese, turkey, cranberry sauce, stuffing, if using, and gravy. Cover with remaining slice of bread, buttered side up.

Preheat panini press. Place sandwich in press, close and cook until bread is toasted and cheese is melted, 4 to 5 min­utes. Alternatively, heat a ridged skillet over medium heat. Add sandwich and cook until bread is toasted and cheese is melted, about 4 minutes.
