Koftes are traditional Middle Eastern meat skewers. This Test Kitchen-approved version feature zucchini and lean ground turkey.

Soak 10 wooden skewers in large bowl of water for 10 minutes.
Meanwhile, in bowl, using your hands, mix zucchini, onion, garlic, parsley, mint, cumin, garam masala, paprika, bread crumbs, egg and turkey until combined; season with salt and pepper.
Form 10 koftes (about 1/3 cup each, 2-inches thick and 3-inches long). Thread one kofta on each wooden skewer; place on baking sheet and refrigerate for 30 minutes.
Preheat oven to 400°F. Bake koftes, turning halfway through baking time, until they reach internal temperature of 165°F. Serve with tzatziki and cucumber ribbons, if using.
