In small bowl, combine garlic, oil and Old Bay-Style Spice Mix. Brush over both sides of veal chops; let stand at room temperature for 15 minutes. Meanwhile, in separate small bowl, mix together bread crumbs, Parmesan, parsley and butter; set aside.
Preheat grill to medium heat; grease grate well. Grill veal chops until golden, 4 to 5 minutes. Flip over; sprinkle reserved bread crumb mixture over top. Close lid; cook until medium-rare or desired doneness, 4 to 5 minutes.
Old Bay-Style Spice Mix
Makes about 1/4 cup.
In small bowl, mix together 1 tbsp ground bay leaf, 2 tsp celery salt, 1 1⁄2 tsp each dry mustard and pepper, 3⁄4 tsp nutmeg, 1⁄2 tsp each ground ginger, paprika and cayenne pepper, 1⁄4 tsp ground cardamom and 1⁄8 tsp ground cloves; transfer to small airtight jar. (Make-ahead: Can be stored at room temperature for up to 2 months.)
