Vegetable Toasts With Avocado Hummus Spread

These veggie-loaded toasts make for great appetizers, potluck snacks, or a light dinner.

Method

In bowl, combine cucumber and carrot ribbons, rice vinegar, sesame oil and sesame seeds. Set aside.

Meanwhile, preheat air fryer to 400°F; spray air fryer basket with cooking spray. In bowl, add chickpeas, onion, hot pepper paste, ginger, five-spice powder and olive oil. Toss to coat chickpeas. Pour into air fryer basket and cook until chickpeas are crispy, 5 to 6 minutes. Transfer chickpeas to bowl; drizzle with honey. Stir to coat; set aside.

Generously spread Avocado Hummus Spread over bread slices. Top each slice with reserved marinated vegetables and crispy chickpeas. Serve with remaining Avocado Hummus Spread.

 

Avocado Hummus Spread

In food processor or blender, pulse 1 chopped ripe avocado, 1/2 cup store-bought hummus, 1 clove garlic, minced, and 2 tbsp each lemon juice and olive oil until smooth. Season with salt and pepper. Makes 1 1/4 cups.
