Beef Medallions

I buy three beef medallions at my local co-op. Usually cost 4 to 5 $. Sprinkle both sides of the medallions with Weber's Six pepper spice. Heat an oven-proof skillet with one tablespoon of olive oil. As soon as the oil is very hot, but not smoking put the medallions into the skillet. Brown one side, as soon as one side is brown, flip the medallions and put into a 400F oven. Cook for 10 minutes for rare, 15 for medium rare and 20 for well done. This will vary with the thickness of the medallions. If you want to get fancy take the medallions out a few minutes early and set on a plate. Put the skillet on the stove top and turn up to high. Splash the same red wine that you are serving with your meal into the skillet. Bring to a boil and scrape up the brown bits. When boiled down a bit, pour over the medallions before serving. Yummy!!
