This is a great, super-quick weeknight supper, loved by kids and adults alike. Serve with a nice salad and you're good to go! Experiment with different kinds of pesto -- red pepper pesto is especially good.

Bring large pot of water to a boil and cook pasta according to package directions. Meanwhile, put tuna into a large casserole dish. Mix in pesto, adding a splash of olive oil if it seems a bit dry. Stir in the cherry tomatoes and 1/3 of the cheese. Once rotini is cooked, stir into tuna pesto mixture. Top with remaining cheese. Pop under the broiler for about 3 minutes until cheese has melted. Enjoy!
