Method

Pizza Dough: Into pan of bread machine, add (in order) water, oil, salt, flour and yeast. (Do not let yeast touch liquid.) Choose dough setting.

Turn out dough onto lightly floured surface; shape into disc. Roll out into 12-inch (30 cm) circle, letting rest if too elastic to roll. Lightly grease 12-inch (30 cm) pizza pan; centre dough on pan. Let rise for 10 minutes.

Meanwhile, in large nonstick skillet, heat oil over medium-high heat; sauté mushrooms, onion, garlic, oregano, salt and pepper until mushrooms are golden, about 10 minutes. Squeeze spinach dry; add to skillet and stir to combine.

Spread pizza sauce over pizza dough. Top with mushroom mixture. Cut each provolone slice in half; arrange over top. Bake on bottom rack of 500°F (260°C) oven until cheese is bubbly and crust is golden and slightly puffed, about 10 minutes.
