I needed a quick appetizer to bring to a potluck one Xmas and I didn't have time to do a cheeseball so I experimented with a few things and came up with this. The red and green make it festive for the holidays.

Combine cheeses and dressing (a food processor makes quick work of this) until well blended. Stir in olives, hot sauce and garlic. Refrigerate at least 30 minutes to allow flavors to blend. This can be served at room temperature as a spread, or warmed in a fondue pot to use as a dip. Don't be tempted to use the pre-shredded mild cheddar from the supermarket - it is too bland to stand out with the other ingredients.
