Combining protein and carbohydrate, French toast is a healthy breakfast that fills you up and keeps you satisfied longer. Choose the smoked salmon or turkey filling, or the peanut butter and banana variation.

Method

Smoked Salmon Filling: Spread cream cheese evenly over 1 side of each bread slice. On each of 4 slices, arrange smoked salmon and onion. Sprinkle with capers. Top with remaining bread slices.

In shallow dish, whisk together eggs and milk. Dip each sandwich into egg mixture to coat both sides and soak up liquid. (Make-ahead: Place on waxed paper-lined baking sheet; cover and refrigerate for up to 12 hours.)

In large nonstick skillet, melt butter over medium heat until bubbly; fry sandwiches, turning once, until golden, about 4 minutes.
