Herbed Pork Roast

Rub with herbs and then roast to perfection. You can get it oven-ready the night before to save time.

In a small bowl, combine thyme, fennel, tarragon, marjoram, garlic, salt, pepper, rosemary and oil. Rub pork with mixture; if desired, refrigerate six hours to overnight. When ready to roast, preheat oven to 450*F. Place pork in a shallow roasting pan; roast 15 minutes. Reduce oven temperature to 350*F; cook pork until internal temperature reaches 155*F, about 1 hour and 20 minutes. Let stand 15 minutes before slicing.
