In large bowl, beat butter with brown sugar until light and fluffy; beat in egg yolks, 1 at a time. Beat in lemon rind and vanilla.In separate bowl, whisk together flour, cornmeal and salt; stir into butter mixture in 3 additions.
Using piping bag fitted with 1/2-inch (1 cm) star tip, pipe into S shapes, 1 inch (2.5 cm) apart, on parchment paper–lined baking sheets.
Bake in 375°F (190°C) oven until golden and edges begin to brown, 10 to 12 minutes. Let cool on pans on racks for 3 minutes; transfer to racks and let cool completely.
