Ingredients

Mojo Glaze:

Method

Stir together cumin, coriander, paprika, sugar and pepper; rub all over ham. Place ham, flat side down, on rack in roasting pan; pour in 1 cup water. Cover tightly with foil; roast in
325ºF (160ºC) oven until instant-read thermometer registers 130ºF (55ºC), about 2 hours.

Mojo Glaze: Meanwhile, in saucepan, heat oil over medium heat; cook onion and garlic, stirring, until softened, about 4 minutes. Add cumin and coriander; cook, stirring, for 1 minute. Stir in orange juice and bring to boil; cook over medium-high heat until reduced to 1 cup, about 20 minutes. Brush half over ham.

Bake ham, covered and brushing with remaining glaze halfway through, until instant-read thermometer registers 140ºF (60ºC), about 1 hour. Transfer to cutting board and tent with foil; let stand for 20 minutes before carving.
