I am a diabetic and needed a good recipe that was low carb. This is a recipe that I created that was delicious, low carb and easy. Everyone in our family loves it - and it is easy to modify for those who don't like blue cheese (though why they would not, I can't imagine!)

Method

Place 2 tablespoons (to taste) of steak spice on wax paper or plate. Roll tenderloin in spice to lightly cover. Cover cookie sheet with tinfoil. Spray with oil.

Put tenderloin on foil and place in 400 degree oven. Bake for 15-20 minutes depending on thickness of tenderloin. (meat should be just past rare).

Remove from oven. Cut a line down length of tenderloin almost half way through. Place slices of blue cheese in cut.

Let sit about 5 minutes before slicing on diagonal to serve. Cheese will begin to melt. Serve with baked potatoes and either french beans or a green salad. Many soft cheeses are good in this recipe, particularly the campazola's, camenbert, or even havarti. It is a quite and easy recipe to serve at a dinner party – just multiply the recipe to account for the number of guests. Do not over season with the spice – it becomes too salty.
