Method

Preheat oven to 400°F; line baking sheet with parchment paper.

In large bowl, combine garlic, oregano, fennel seeds, hot pepper flakes and olive oil. Add bread pieces and toss to coat well. Add Parmesan and toss again.

Spread mixture onto prepared baking sheet. Top with capocollo, tomato rounds, cherry tomatoes, red pepper, mozzarella and olives. Bake until bread is toasted and cheese is melted, about 20 minutes. Sprinkle with basil leaves.
