These tiny sandwiches may sound fussy, but they come together very quickly if you use a food processor. When pressing the patties to flatten, wet your hands to avoid a sticky mess. Cover and keep the finished patties warm while the other batches cook.

Method

In food processor, pulse together bread crumbs, egg, garlic, green onions, salt and pepper until onions are finely chopped. Add shrimp and continue to pulse until finely chopped. Scoop by scant 1/4 cup, pressing lightly to make 3/4-inch (2 cm) thick patties. (Make ahead: Layer between waxed paper in airtight container and refrigerate for up to 12 hours.)

In large nonstick skillet, heat oil over medium-high heat. Cook patties, in batches and turning once, until golden and firm, about 4 minutes.

Wasabi -Lime Mayo: Meanwhile, mix mayonnaise, lime zest, lime juice, wasabi and pepper. (Make-ahead: Cover and refrigerate for up to 2 days.)

Sandwich patties, mayo and cilantro in buns.
