Souvlaki Pitas with Tzatziki

This is a very versatile recipe because it can be made using pork, chicken or Elk meat. It can be served as a "taco" or seperatly. Kids love it because they can dip everything and adults love it because it tastes great and is good for you!

Method

Marinade: In a large tupperware with tight fitting lid, combine first 5 ingredients, add pork then toss to coat evenly. Refrigerate 3 hours or overnight, tossing occassionally. Tzatziki: In a medium sized bowl, combine next 7 ingredients, cover with saran wrap and refrigerate for 2 hours or overnight*. *Tips-Garlic becomes very strong when left overnight. You can substitute fresh garlic with 1 tsp. of garlic powder for a milder garlic flavour. Serve vegetables in seperate bowls or as a salad. Pre-heat grill to 350 degrees Farenheit. Thread pork and red onions onto skewers(onion between each piece of pork)Reserve left-over marinade for basting. Grill skewers for about 10 minutes total. Turning and basting occassionally. Taco method: Place 1 skewer and 1 pita on each plate. Remove meat and place into the center of pita (allow guests to do this themselves). Top with vegetables and Tzatziki. Fold in sides to eat as a taco. Alternative method: Cut Pitas into 4 wedges for dipping. Serve vegetables as a salad with skewer on the side. Either way is just as good however, when serving guests with unknown dietary restrictions, it is best to serve everything seperatly, allowing them to mix and match to their taste.(Kids like it this way too!)
