My husband, David and I very much enjoy eating as do lots of people but we have a golden rule - no junk food. We eat healthily, we love recipes using fresh vegetables and eat lots of fruit. I am constantly looking for new vegetarian recipes which have a different spin on the usual rather dreary choices available. I was inspired to create this recipe as although I know that soy is especially beneficial to pre and post menopausal woman, I can not tolerate the taste or texture of tofu. I experimented with these burgers until I obtained this taste and lovely nutty texture. The burgers can be served to children with the usual fix-ins (they don't need to be told that they are not made of meat!) They can also be served as a main dish together with vegetables, I have tried sauteed red peppers and green beans or ratatouille, okra sauteed in tomato sauce, and potatoes, lovely new ones boiled in their skins or bigger potatoes cut up small, drizzled with oil and sprinkled with sweet paprika and then roasted. The variations are endless.
