Fresh strawberries, airy icing and moist vanilla cake – who could ask for anything more? This is a great cupcake for a strawberry social, a Canada Day event or just celebrating the sweet days of summer.

Method

Bake vanilla cupcakes ahead of time. Let cool completely. 

Make frosting. Using piping bag fitted with star tip, pipe frosting onto tops of cupcakes.

Hull strawberries and stand on stem ends; slice each lengthwise into 1/8-inch (3 mm) thick slices.

With tips hanging over edge of each cupcake, arrange 5 largest slices around edge to resemble petals. Repeat with 3 or 4 slices in circle in centre. Place bit of strawberry in centre of each circle.
