In small bowl, stir together mayonnaise, mustard and pepper.
Cut buns in half horizontally; spread each half with about 1 tsp (5 mL) of the mayonnaise mixture. Cut cheese slices to fit buns and place on bottom halves. If necessary, cut meat to fit buns and place on cheese, overlapping slices of meat. Sprinkle meat with 2 tbsp (25 mL) lettuce; top lettuce with tomato and onion slices and bun tops.
