Massaman curry powder is a blend of spices that has a bit of heat and a ton of flavour. If hot curry powder is unavailable, use regular curry powder and add a pinch of cayenne pepper. This topping goes well with Italian and veggie sausages. Serve with paratha and naan.

In saucepan, heat oil over medium heat; cook onion until beginning to soften, about 5 minutes.

Add garlic and curry powder; cook until fragrant, about 1 minute. Stir in tomatoes, brown sugar, tomato paste, salt and pepper; cook over mediumlow heat until reduced to 2 cups, about 5 minutes.
