Nothing could be easier or more tempting than these broiled fillets served on lettuce and topped with a tangy vinaigrette. Complete the meal with corn bread or whole wheat rolls.

  • Portion size 4 servings



In bowl, whisk together vinegar, garlic, onion, salt and pepper; whisk in oil. Add tomato, green pepper, parsley and coriander; set aside.

On greased baking sheet, brush fish lightly with vegetable oil; broil for about 5 minutes or until fish flakes easily when tested with fork. Arrange on 4 lettuce-lined plates; spoon vinaigrette over top.
