Method

Cook noodles according to package directions; drain and rinse under cold water. Drain well; set aside.

Meanwhile, in large saucepan, bring broth, water, ginger, star anise, garlic and cinnamon stick to boil. Reduce heat to medium-low; cover and simmer for 10 minutes. Using slotted spoon, remove ginger, star anise, garlic and cinnamon stick; discard. Add vinegar, fish sauce, soy sauce, mushrooms and red onion; return to boil and cook for 5 minutes. Place noodles in bowls; top with pork, bok choy and mint. Pour broth over top.
