Method

In large saucepan, melt butter over medium-low heat. Add onion, garlic and thyme; cook until onions are softened, about 5 minutes. Add pota­toes and broth; bring to boil over medium heat. Season with salt and pepper. Simmer for 10 minutes. Add zucchini; continue cooking until potatoes are tender, about 5 minutes.

Reduce heat to low. Using ladle, transfer 2 cups of soup to blender and purée. Return puréed soup to saucepan. Add milk, ham and ched­dar, and continue cooking until cheese has melted, about 2 minutes. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days.)
