In food processor or blender, purée cucumbers, pineapple, ginger and mint with 4 cups cold water, lime juice and maple syrup. Strain mixture through fine sieve placed over pitcher. Refrigerate until ready to serve. (Make-ahead: Can be refrigerated for up to 2 days.)

Just before serving, pour agua fresca into glasses filled with ice cubes. Add gin, if using, and stir to combine. Garnish with a few cucumber slices and mint sprigs.

Did you know?

Popular in Central America and Mexico, agua fresca is a water-based drink flavoured with an assortment of fruits including pineapple, lime, watermelon or strawberries—the perfect summer refreshment! You can serve it over ice, mocktail style, or add in a drop of gin (about 1 oz per glass) to transform it into a crisp cocktail.
