In large skillet, heat oil over medium-low heat. Add tomatoes; cook for 5 minutes. Stir in tomato paste and oregano. Cook, stirring occasionally, for 5 minutes. Add eggs; cook, stirring often, until eggs are set but still creamy, about 2 minutes. Remove skillet from heat. Stir in three quarters of the feta; season with pepper. Mix well to combine.
Top toasts with egg mixture; sprinkle with olives and remaining feta, and fresh oregano leaves, if desired.
