Scrambled Egg, Tomato & Feta Toasts

In large skillet, heat oil over medium-low heat. Add tomatoes; cook for 5 minutes. Stir in tomato paste and oregano. Cook, stirring occasionally, for 5 minutes. Add eggs; cook, stir­ring often, until eggs are set but still creamy, about 2 minutes. Remove skillet from heat. Stir in three quarters of the feta; season with pepper. Mix well to combine.

Top toasts with egg mixture; sprinkle with olives and remain­ing feta, and fresh ore­gano leaves, if desired.
