Sesame-Crusted Tofu with Noodles & Edamame

Method

Tofu   Place cornstarch in bowl; season with salt and pepper. In separate bowl, lightly beat egg. In another bowl, combine sesame seeds and bread crumbs. Dredge tofu in cornstarch, turning to coat well; shake to remove excess. Dip tofu in egg, then in sesame seed mixture, turning and pressing to coat well.

In large skillet, heat oil over medium heat. Add tofu and cook until golden, turning halfway through cooking time, about 10 minutes.

Noodles  Meanwhile, in large saucepan of boiling salted water, cook noodles until al dente, about 5 minutes. Add edamame 2 minutes before the end of cooking time. Drain, rinse and drain again. In small bowl, whisk together oil, lime juice, soy sauce, honey, ginger and garlic. In large bowl, combine about two-thirds of the sauce with noodles, edamame and green onions. Serve noodles with tofu and remaining sauce.
