Whipped Feta & Peach, Corn or Tomato Bruschetta

There’s nothing like the sun-soaked deliciousness of fruits and vegetables at summer’s end. Enjoy the flavours with these assorted sweet and savoury toasts easily done on the grill.

Whipped Feta

Crumble feta cheese; reserve 2 tbsp in refrigerator. In food processor, purée remaining feta, yogurt, honey, oil and lemon zest and juice until combined and slightly lumpy (if necessary, add up to 2 tbsp yogurt to reach desired consistency). Season with pepper. Set aside in refrigerator. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days.)


Preheat barbecue to med­ium heat (about 350°F). Brush peaches, corncobs, tomatoes and bread slices with 2 tbsp of the oil. Place corn on grill, close lid and cook, turning occasionally, about 10 minutes. Place peaches, tomatoes and bread on grill; continue cooking, turning halfway through grilling time, until vegetables are grill-marked and bread is crispy, 3 to 5 minutes. Transfer bread slices to large serving platter and vege­tables to cutting board.

Rub grilled bread slices with cut side of garlic cloves. Peel peaches, if desired. Dice peaches and tomatoes and place in two separate bowls. Remove corn ker­nels from cobs; place in third bowl. Add 1 tbsp of the basil, 2 tsp of the oregano and 1 tsp of remaining oil to each bowl; toss gently to mix.

On each bread slice, spread 2 tbsp reserved Whipped Feta. Top 4 slices with corn mixture, 4 with peach mixture and 4 with tomato mixture. Sprinkle with reserved crumbled feta cheese. Drizzle with balsamic glaze, if using, and sprinkle with fresh herbs, if desired.

Test kitchen tip

Grilled peaches and tomatoes produce a lot of juice, so it’s best to slightly drain the fruit and vegetable mixtures before topping bread slices. The remaining juices can be used as a base for a vinaigrette. Yum!
