Jalapeño Simple Syrup (in recipe):
Method
Sprinkle seasoning salt on small plate. Rub lime wedge around rims of 4 rocks glasses. Turn glasses upside down and press rims into seasoning. Set aside.
In blender, combine mango, passion fruit, Jalapeño Simple Syrup, lime juice and 1 cup ice cubes. Purée until smooth, about 1 minute. Add tequila and triple sec; purée until smooth, 10 seconds.
Fill prepared glasses with ice; divide cocktail among glasses. Garnish with jalapeño slices.
Jalapeño Simple Syrup
In small saucepan over high heat, bring 1 cup each granulated sugar and water to boil. Add 1 jalapeño, sliced. Reduce heat to medium and simmer, stirring occasion- ally, until syrup is clear and slightly thickened, about 3 minutes. Reduce heat to low; simmer for 10 minutes. Let cool for 1 hour. Strain through fine sieve. (Make-ahead: Can be stored in air-tight container and refrigerated for up to 2 weeks.) Makes 1 1/2 cups.
