A nice change from the traditional spaghetti and meat sauce, this pasta bakes into a pie shell, making the outside layer crispy. Canada's Food Guide to Healthy Eating recommends two to three servings of meat and alternatives each day. One serving of cooked meat is about 3 ounces (90 grams), on which we are basing the sauce, then we're bulking it up with vegetables. Canned tomato products have the highest amounts of lycopene, which can reduce the risk of certain cancers. Serve with Light Caesar Salad.

In a hurry one night, I created this Baked Macaroni & Cheese Casserole. I used regular macaroni pasta, the cheeses that I had on hand and a little something extra - Sun Dried Tomatoes in Oil. My family loves Mac & Cheese, it's our favorite "Comfort Food" and they say that this is the best version that we've had to date, declaring that it's "Perfect"! Served along with a Green Salad and some Crusty Bread or Buns you'll have an Excellent Family Dinner!

Roasted and stir-fried vegetables are layered between flavoured quinoa to create a healthy and colourful take on vegetarian lasagna. My middle daughter is the lone vegetarian in a household of meat lovers. I find lately I've been incorporating more and more vegetarian options into our meals. It's easier on the family budget, the environment and our collective waistlines! That being said, I do find it more difficult to find a vegetarian meal that is "company worthy". This recipe, created with local veggies, is substantial enough to satisfy meat eaters and impressive enough for a casual dinner with friends. While I love how nutritious quinoa is, I sometimes find it a bit bland. Mixing the quinoa layers with 3 different sauces adds a flavour boost. Use the vegetables listed or try ones that are in season in your local area. If you select items that are fresh and colourful you can't go wrong. While the ingredient list looks long don't be daunted, most of the work is building the lasagna layers and the preparation is not complicated. Serve with a dollop of sour cream and a light green salad for a delicious, healthy and budget-friendly (under $40 including salad) dinner with friends.

We asked Anna Comfort, 10, about her favourite food made by Mom, Judith Comfort, a Nova Scotia food writer and author of Spuds! Dulse! Fiddleheads! (Nimbus, 1986). Anna says, "I like her chicken better than Kentucky Fried because it's not as salty, but it's still very crispy and not too spicy. My mom lets us eat it with our hands. But it's sticky, so plan to use about 10 napkins. It's an easy recipe I can make myself. I like mashed potatoes and peas to go along with it." French Onion Soup is one of my favourite dishes, especially on a cold autumn or winter night. I like to bake bread, and as it begins to go stale after one day (no preservatives) I'm always searching for a way to use it up. I decided to experiment until I felt I had perfected home-made French Onion Soup. I have served it to several friends, and family, and it always gets raves. Based on my own tastes and feedback from others, this is simply the best French Onion Soup. We find that a bowl of this soup with salad is plenty for a nourishing and satisfying meal. It could also be served as an appetizer, or a lunch.

Baked macaroni is one of our Sunday dishes that we serve with stewed chicken or beef, rice, stewed red beans and potato salad. This will stick to your bones and you won't be hungry too quickly thereafter. Baked macaroni is definitely a tasty comfort food that all ages will love. Best served hot and leftovers are just as good. For those who are lactose intolerant, omit the can of evaporated milk and substitute with 1/2 cup of chicken broth. You must also increase the amount of breadcrumbs by 1/4 cup. Don't use too much broth as the mixture will not bind together. Any Canadian marbled cheese and parmesan cheese can be used.

The key to this recipe is to end up with a sauce that is thicker than water and contains big flavors though not so much as to overpower the mussels. Thus, the reduced wine adds flavor not more liquid; similarly the heavy cream instead of half & half or milk. The final trick that prevents this from being too thick is adding the mussels and covering the pan. As they cook, the mussels release their juices and this keeps the sauce at the correct consistency and intensifies the flavours, once you perform the final stir. The combination of ocean air with smokiness and oak transcends the sublime. (Excellent with Caesar salad and more of the same wine used for cooking.)

My family absolutely loves this dish. It is one of those wonderful dishes that is best prepared the day ahead which leaves you plenty of time for entertaining when your friends are over. It came about as my son was dating a girl who was a vegetarian, I wanted to make a dish for supper that we could all enjoy with her. I looked at a variety of recipes and formulated this one, which we have come to love - I have shared the recipe with garlic loving friends who just can't get enough! All the ingredients can be grown in my backyard, although I usually buy the eggplant at the St. Jacobs Farmers market in Waterloo, about 15 minutes from my home. Serve this with a caesar salad and some crusty bread and voila! A meal your friends won't soon forget!

Pure Canadian maple syrup, pure fancy molasses and sweet mustard blend with the flavour of the two-pepper rub on pork tenderloin for an "mmm..." sweet and spicy finish. Casual entertaining proves far more enjoyable if preparation is fairly simple, allowing the cook an opportunity to benefit along with the guests. Pork tenderloin, properly skinned and cleaned, makes the perfect surface for a dry rub. Rubbed with a simple mixture of freshly ground pepper, cayenne and a dash of salt, the tenderloin can be prepared as far ahead as the night before or just before guests arrive. Initially grilled on high for 10 minutes, it is then brushed with a prepared glaze and finished grilling. Once done, it is removed from the heat and tented with foil for approximately 5-10 minutes. To serve, slice pork and fan around a platter. Drizzle remaining glaze over the meat. Serve with garlic mashed potatoes, steamed honey dill carrots and a fresh garden salad on the side.
