French Onion Soup is one of my favourite dishes, especially on a cold autumn or winter night. I like to bake bread, and as it begins to go stale after one day (no preservatives) I'm always searching for a way to use it up. I decided to experiment until I felt I had perfected home-made French Onion Soup. I have served it to several friends, and family, and it always gets raves. Based on my own tastes and feedback from others, this is simply the best French Onion Soup. We find that a bowl of this soup with salad is plenty for a nourishing and satisfying meal. It could also be served as an appetizer, or a lunch.
The crunchy corn and fresh alfalfa sprouts give these pinwheels a great texture. Make a few extra to store in the fridge for lunch the next day!

Slightly coarse cornmeal adds a pleasing crunchy texture to cornbread. No multigrain flour? Use 1/3 cup (75 mL) each all-purpose flour and whole wheat flour. Be sure to measure out the ingredients before you put the skillet in the hot oven. There's just enough time to mix them while the butter melts and the skillet heats.
The abundance of garlic might intimidate you, but just remember that roasting develops its nutty, caramelized flavour.
Serve these Canadian-inspired quesadillas with a fruit salsa, such as mango or peach. The filling can be made a few hours in advance and assembled just prior to cooking to keep the tortillas crisp. Cut into small portions to serve as an appetizer.
