This recipe turns powerhouse lentils into a healthy spin on burgers. Golden, crispy baked fries require very little oil but still don't stick to the parchment paper–lined pan—they are the tastiest good-for-you fries you'll ever enjoy. Thick Greek yogurt and fresh garlic on top of the patty give it a creamy kick, and a simple fresh salsa is the only condiment you'll need.
Pozole is a Mexican broth-based soup made with meat and hominy, a type of corn. Traditionally it would require many hours to prepare, but this version takes much less time and still tastes wonderfully authentic. Pozole is served with a garnish tray so everyone can add his or her own final touches.
When packing this sandwich, put the tuna mixture in an airtight container. Cut the pita in half and pack it in a resealable plastic bag and put some leaf lettuce in another one. At lunchtime, your child can assemble the sandwich, and this way the pita bread wil not get soggy.

This is my family's favorite dinner. It is quick and easy to make with ingrediants from your freezer. When I introduced it to my brother and his family it also became their favorite as well especially with his younger children.
