Cornish hens brushed with a simple lemony sauce are the perfect springtime main. Splitting the hens in half ahead of time makes serving a breeze because you don't have to worry about carving at the table. Serve with grainy mustard, if you like.
These little loaves work wonders as gifts, but you can also set them out as a sweet afternoon treat or as part of a holiday brunch. For a selection of flavours, make the Chocolate-Pear Loaves and Chestnut Loaves as well and package the trio in a pretty tin.
Liven up mincemeat with pears, cranberries, lemon juice and brandy.
