Halloumi is a firm, springy and intensely flavourful cheese with a high melting point that makes it perfect for searing or grilling. Feel free to use whatever type of greens you have on hand; torn green or red leaf lettuce and romaine are great substitutes for the mixed baby greens.
Grilled corn is the ultimate summer side. Brushing the aioli onto the corncobs during grilling allows it to cook. If raw eggs are a concern for you, discard the remaining aioli rather than serving it at the table. If you prefer, substitute with our Sriracha Mayonnaise.

Broiling the halloumi on the same pan used to roast the sweet potatoes helps keep pots and pans to a minimum, but, if you prefer, you can sear the cheese (without any added fat) in a nonstick skillet.
