If you have guests who prefer different levels of doneness, save the centre slices for the rare-beef lovers and the outer pieces for those who prefer their meat well done.
Being blessed with living near the Pacific ocean, we have always been experimenting with different ways to serve salmon. We've tried pan frying, poaching, baking, etc. but always come back to the BBQ. With our BC weather, we have barbecued in the dead of winter, in the (mild) snowy season and throughout the year. After purchasing our newest & best barbecue (grill) ever 2 years ago, we feel we have perfected the ultimate salmon BBQ recipe. It's easy to prepare and the blend of herbs & spices lend a unique flavour "memory" of tangy & sweet without covering up the salmon's own natural goodness! We pretty much only eat our salmon this way now and especially incorporate it into any evening of happy entertaining, including New Years!

Fresh homemade cannelloni are a cinch to make—all you need to do is cut, fill and roll! Piping the filling onto the pasta makes for a mess- and fuss-free assembly, but feel free to spoon on the filling if you don't have a piping bag on hand. Serve with a mixed green salad.
It is hard to believe that this entire meal for 6 can be prepared in under an hour. The ingredients in this main course and side dishes are completely Canadian (including the Canola oil), but just like our country's unique cultural mosaic -- they have been flavoured with exotic spices and other wonderful additions which highlight Canada's tolerance and respect for people of other lands. The lamb was reared in Ontario and the eggplant can be grown in almost any Canadian garden. I sometimes serve the lamb with chick pea fries and chuckle when I remind my Indian in-laws that Canada and Australia are now growing garbanzo beans, too.
