If ever there was a British national dish, this has to be it. Loved from John O’Groats to Land’s End, fish and chips is the perfect Friday night supper.
In mid-19th-century Britain, the worlds of Irish immigrants – with their potato dominated diet – and Jewish fried fish vendors collided, and a national dish was born, spawning countless chippies on high streets and seaside piers up and down the land. About a quarter of all white fish and 10 per cent of the potatoes now sold in Britain are sold in fish and chip shops. Not to mention the pickled onions and eggs, curry sauce and mushy peas that go with them.
With a creamy rich stuffing, this salmon makes an elegant dish for entertaining. You can prepare it ahead to simply pop into the oven when guests arrive.
Fish is a staple in our home and I am always trying to create new accompaniments, while at the same time using local foods. I enjoy creating nutritious meals that are diabetic friendly (two of my children have Type 1 Diabetes), heart healthy, and always incorporating as many colours of the rainbow that I can. This dish can be made with any white fish as it looks so inviting with the reds and greens of the sides. Wild blueberries and Halibut - a perfect marriage as opposites do attract! I have (tried) roasted beets before but was always a bit disappointed when they dried out, so I tried this crusting method and it turns out a moist brightly colored beet with just a hint of horseradish! When plating this recipe, layering creates a presentation that is not only eye-appealing, but a superb blend of flavors. Using summers' bounty means delicious fresh menus for friends and family.

Look for Pacific halibut from North America for this dish. It's caught in a more ocean-friendly manner than other types of halibut.
There would be a local uproar if this simple but delicious fresh fish were not available at Paddy's & Rosie's.
Serve with Lemon Potatoes (recipe link below) and peas. Grill the potatoes first, then add the fish during the last 10 minutes of cooking time. Cooking fish with its skin on means that you don't have to turn it.
