Nanaimo Bars have always been my absolute favourite square, and from that I got the idea for this fabulous frozen dessert. A Bird's vanilla-custard batter with chocolate graham wafer, walnut, and coconut crumbled throughout, topped with your favourite chocolate sauce. The response every time someone tastes it?: "Wow! This tastes just like Nanaimo Bars!"
Use a heavy pan or rolling pin to crush the candy canes, then shake through a fine sieve to remove the powdery bits. Avoid the food processor because it will crush them to dust. Instead of candy canes, you can cut the dough into a variety of holiday shapes.
Each of these adorable mini cupcakes is topped with a special treat: candy presents! Square or rectangular candies work best, but you can easily trim them to fit if you want a variety of gift box shapes.
A dense chocolate cake layered with seedless raspberry jam is a cinch to cut, and its generous size makes it suitable for large celebrations. Serve with Raspberry Sauce (see Additional Information below), berries and ice cream.
