We replaced the traditional beef with beets in this "carpaccio" to make a colourful dish. Check your local farmers' market or Asian grocery stores for fresh pea shoots—they're the curly, leafy tendrils of the pea plant.
Dried mushrooms add even more flavour to the fresh mushrooms in this creamy, delicious soup. Save the shiitake stems for the stockpot.
When prepping the kale, save the stems to put through your juicer, or to chop and add to a stir-fry. This dish is served at room temperature but is equally delicious chilled for lunch or dinner the next day.
Beets are hearty, delicious and so good for you. Red beets tend to stain everything in their path, so if you're using a combination of red and gold, keep the two colours slightly separated when roasting.
