Almond-Cherry Fruit Crisp

4 cups (1L) pitted fresh sweet cherries
2 cups (500 mL) diced peeled apples
1/3 cup (75 mL) granulated sugar
2 tbsp (25 mL) all-purpose flour
2 tsp (10 mL) lemon juice
Whipped cream (optional)
Topping:
1 cup (250 mL ) all-purpose flour
3/4 cup (175 mL ) chopped blanched almonds
2/3 cup (150 mL) packed brown sugar
1 tsp (5 mL) grated lemon rind
1/3 cup (75 mL) butter, melted
Preparation:
In bowl, combine cherries, apples, sugar, flour and lemon juice; pour into greased 8-inch (2 L) square glass baking dish. Set aside.
Topping: Mix together flour, almonds, sugar and lemon rind; drizzle butter over top. Stir until crumbly. Sprinkle evenly over fruit mixture.
Bake in centre of 350°F (180°C) oven for 45 to 60 minutes or until bubbly, topping is golden and fruit is tender. Serve with scoop of whipped cream (if using). Makes 6 servings.
