This vinaigrette is perfect for salads or drizzled over our Veggie-Stuffed Squash Bowls.

Ingredients

  • 1/3 cup olive oil
  • 3 tablespoons lemon juice
  • 1 tablespoon chopped thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons liquid honey
  • 1/4 teaspoon each salt and pepper

Method

In small bowl, whisk together oil, lemon juice, thyme, mustard, honey, salt and pepper. Drizzle over Veggie-Stuffed Squash Bowls.

Makes about 1/2 cup.
