Apricot, Chicken and Almond Salad

The sweet and savoury combination of chicken, dried fruit and feta makes for a delicious light dinner option. Vary the fruit and the cheese for totally different takes on this classic dinner salad.

Ingredients

  • 2 tbsp 2tbspolive oil
  • 2 tsp 2tspbalsamic vinegar
  • 1 pinch 1pincheach salt and pepper
  • 2 cups 2cupstorn Boston leaf lettuce
  • 2 2cooked boneless skinless chicken breastboneless skinless chicken breasts, diced
  • 1/3 cup 1/3cupcubed feta cheese
  • 1/3 cup 1/3cupchopped dried apricotdried apricots
  • 1/4 cup 1/4cupsliced almonds, toasted

Preparation

Whisk together oil, vinegar, salt and pepper.

In large bowl, toss together lettuce, chicken, feta cheese, apricots and almonds. Drizzle with dressing; toss to coat.
