These small tasty muffins are low in fat.
Ingredients
- 1 cup orange juice
- 1/2 cup chopped dried apricots
- 1/2 cup raisins
- 1 egg
- 1 egg white
- 2 tbsp butter, melted
- 1-1/2 tsp vanilla
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 pinch nutmeg
Preparation
Combine orange juice, apricots, raisins, egg, egg white, butter and vanilla. In large bowl, combine flour, sugar, baking powder, baking soda and nutmeg; stir in juice mixture just until blended. Fill greased muffin cups three-quarters full. Bake in 350ÃÃÃÂÂðF (180ÃÃÃÂÂðC) oven for 20 to 25 minutes or until golden and firm to the touch.
