  • 1 head 1headBibb lettuce, separated
  • 2 2belgian endive, separated
  • 1 small head 1small headradicchio lettuce, separated (or 1 more endive)
  • 1/2 1/2sweet red peppersweet red peppers or sweet green pepper
  • 1/2 1/2white onionwhite onions or spanish onion
  • 2 2avocadoavocados

Citrus Dressing

  • 1/4 cup 1/4cuporange juice
  • 1 tbsp 1tbspred wine vinegar
  • 1 tsp 1tspDijon mustard
  • 1/2 tsp 1/2tspsalt
  • 1 1clove garliccloves of garlic, minced
  • 1 dash 1dashhot pepper sauce
  • 1/2 cup 1/2cupolive oil

Citrus Dressing: In bowl, stir together orange juice, vinegar, mustard, salt, garlic and hot pepper sauce; whisk in oil. (Dressing can be covered and refrigerated for up to 2 days.)

In large salad bowl, arrange Bibb lettuce, endive and radicchio. Cut red pepper into thin strips and onion into thin rings; add to bowl. Peel and pit avocados; cut into bite-size cubes and sprinkle over salad. Drizzle with enough dressing to moisten; toss well.
