    Half avocado, peeled and diced
    1 tbsp (15 mL) diced tomato
    1 tbsp (15 mL) minced red onion
    2 tsp (10 mL) extra-virgin olive oil
    2 tsp (10 mL) lemon juice
    Pinch each salt and pepper
    1 tsp (5 mL) minced fresh or pickled jalapeño_pepper (optional)

Preparation:

In bowl, mix together avocado, tomato, onion, oil, lemon juice, salt, pepper, and jalapeño pepper (if using).
