This refreshing burst of flavour is sure to cool you on even the warmest spring day. It's wonderful for dessert and perfect as a refresher between courses of a sophisticated dinner.

Grate enough rind from grapefruit to make 1 tbsp (15 mL). Squeeze out juice and strain through fine sieve to make 3-1/2 cups (875 mL). Set aside.

In saucepan, stir together sugar, grapefruit rind and 3/4 cup (175 mL) water until sugar dissolves. Bring to boil; cook for 5 minutes. Strain through sieve into bowl; let cool. Stir in grapefruit juice. Pour mixture into shallow metal pan; freeze for 3 to 4 hours or until almost firm. Break up into chunks and transfer to food processor; pur?until smooth. Place in chilled airtight container and freeze for 1 hour or until firm. (Alternatively, freeze in ice-cream maker according to manufacturer's instructions.) Store in freezer for up to 1 day.
