White Chocolate, Cranberry and Pistachio Cookies

Ingredients

  • 2/3 cups unsalted butter softened
  • 3/4 cups packed brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 oz white chocolate chopped
  • 2/3 cups shelled unsalted pistachios
  • 1/2 cup dried cranberry

Method

In large bowl, beat together butter, brown sugar and granulated sugar until fluffy; beat in egg, then vanilla.

In separate bowl, whisk together flour, baking soda and salt; stir into butter mixture. Stir in white chocolate, pistachios and cranberries.

Drop by heaping 1 tsp (5 mL) onto parchment paper–lined baking sheets. Bake in 350°F (180°C) oven until golden, 10 to 12 minutes. Let cool on pans on racks.
