In large bowl, combine Date Purée, oil, vanilla, cinnamon, ginger and salt. Add remaining ingredients and toss to coat well. 

Preheat oven to 325°F; line baking sheet with parchment paper. Spread mixture over prepared baking sheet. Bake until golden brown, stirring twice during cooking time, about 30 minutes. Let cool completely on baking sheet. (Make-ahead: Can be stored in airtight container at room temperature for up to 1 week.)
