Candied Orange Rind

To remove any bitterness, bring strips of orange rind and cold water to boil, then drain. Repeat 3 times. then continue with recipe.

Ingredients

  • 1 1orangeoranges
  • 1-1/3 cup 1-1/3cupgranulated sugar
  • 1/4 cup 1/4cupwater

Preparation

Using vegetable peeler, cut strips of rind from orange. Cut lengthwise into thin strips.

In saucepan, bring 1 cup (250 mL) of the sugar and water to boil, stirring until sugar is dissolved; boil for 1 minute.

Add rind; simmer until translucent, about 6 minutes.

With slotted spoon, remove rind, shaking off excess syrup. Immediately toss with remaining sugar, using fork to separate pieces. Let harden on plate. (Make-ahead: Store layered between waxed paper in airtight container for up to 2 weeks.)
