Candied Orange Rind
Servings: 1/3 cup (75 mL)
Ingredients:

1 orange
1 cup (250 mL) granulated sugar
1/4 cup (50 mL) water
1/3 cup (75 mL) granulated sugar
Preparation:
Using vegetable peeler, cut strips of rind from orange. Cut lengthwise into thin strips.
In saucepan, bring sugar and water to boil, stirring until sugar is dissolved; boil for 1 minute.
Add rind; simmer until translucent, about 6 minutes.
With slotted spoon, remove rind, shaking off excess syrup. Immediately toss with sugar, using fork to separate pieces. Let harden on plate. (Make-ahead: Store layered between waxed paper in airtight container for up to 2 weeks.)
